Chicken Tacos
An easy weeknight dinner that comes together in 10 minutes or less with just a few pantry staples such as beans, tomatoes and frozen corn along with leftover chicken.
Shred leftover chicken into a medium skillet. Add in can of rinsed black beans, 1 cup of corn, and 1 can of mexican flavoured stewed tomatos. Heat over medium heat for 5-10 minutes until everything is warmed through.
While skillet is heating, cut up lettuce, fresh tomatos, red onion and shred 1 cup of cheese – then set aside. Heat tortillas in mircrowave 10 – 15 seconds.
Once chicken filling is warm serve the meal family style on your table. Each person fills their own tortilla with their own combination of chicken mixture and garnishes.
Serve with sour cream, salsa or guacamole if desired.
