Chicken Tortilla Soup

A versatile crockpot recipe that can easily be turned into other dishes for those picky eaters.

Cooking Time: 300
Yield: 8 cups
Description:

This easy soup will make your whole house smell amazing! Picky eaters don't like soup all of a sudden? Take out the fillings and make a taco! Kids don't like the look of the shredded chicken? Hide it inside a quesadilla! 

Ingredients:

8 Chicken thighs or 4 chicken breasts
19 oz can of Mexican flavoured tomatoes*
28 oz can diced tomatoes
1 green pepper diced
1 onion thinly sliced
cilantro stems diced finely
1 clove garlic
1/2 cup shredded cheese (Monterrey Jack or Cheddar)
4 tortillas sliced ( 1/2 tortilla per bowl)
1 tbs finely chopped cilantro (topping)

Mix all ingredients (except cheese) together in the crockpot and set to cook on low for 8 hours or on high for 5 hours. Using thigh meat ensures the chicken won't dry out. If using breast meat reduce cooking time. 

In the last hour remove the chicken and shred – then return to crock pot. Serve in bowls sprinkled with cheese, cilantro and tortilla strips.  Consider replacing with crushed tortilla chips if you have no tortillas on hand. 

If your child is a picky eater you can remove some of the meat and tomatoes and put into a tortilla to serve as a taco OR hide the fillings in a tortilla cover with cheese and grill to make a quesadilla. 

* If you cannot find Mexican spiced tomatos add in 1 1/2 tsp cumin, 1tbs Chili powder, garlic and a pinch of salt & pepper – adjust seasonings to your taste. If you are unsure of the spice level of your chili powder we suggest to add less and adjust to taste.
