Fortune Cookies

A fun idea for parties these easy cookies taste just like the ones from your local Chinese food shop.

Yield: 12 cookies
Description:

Get the kids involved by having them write fortunes. Use strips about 8cm long by 1cm thick. Fold papers in advance and insert on top of cookie prior to folding. 

 

Ingredients:

1 egg white
1/4 cup sugar
1/4 cup flour
pinch salt
1/4 tsp vanilla

Assemble all the ingredients prior to starting and plan out where you will shape the cookies once they come out of the oven as you need to work quickly. A wooden cutting board is ideal. Set muffin tins nearby as these will help the fortune cookies hold their shape as they cool. 

Preheat oven to 400 degrees. Line a baking tray with 

Sift together the flour and sugar and add a pinch of salt. 

Mix the egg white and vanilla on low speed until frothy. Once the egg white is foamy but not yet stiff peaks (don't overbeat) add in the flour and sugar mixture. Have a few tablespoons of water handy in case you need to thin out the batter. It should resemble super thin pancake batter. 

Using a tablespoon drop the batter onto the parchment paper leaving lots of room in between to spread. Make a wider circle on the parchment with the back of your spoon – it should be very thin. 

Bake 5 mins or until edges are lightly browned and the surface looks dry. 

Remove and working quickly use a spatula to loosen the cookies. 

Fold each circle in half and then using the edge of your cutting board squish the folded side of the cookie in half until it resembles a fortune cookie shape. Leave the cookies in the muffin tin for at least 5 mins to cool and harden. 

Store in an airtight container for up to 3 days.
