In May our Momstown Mississauga moms organized and participated in a freezer meal exchange. A group of nine moms agreed to make nine batches of one recipe (one for each participant), and then the group met and swapped the meals; each participant went home with nine different meals!
The idea is that making a bunch of the same dish at the same time can save time in the long run; you spend one evening cooking and in turn save time having to prep and cook different meals down the road. Also, two of the participants were pregnant at the time; the meal exchange was a wonderful way to help them stock their freezer so they have healthy meals on hand for the busy months to come.
For this exchange our Moms decided to make crockpot friendly meals for ease, and gluten free in order to accomodate dietary restrictions. Here's one of the recipes that was made.
SLOW COOKER GLUTEN FREE CILANTRO LIME CHICKEN
Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed. Label the bag with the recipe name and cooking instructions.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours).
Serve with tortillas and toppings such as with sour cream, guacamole, salsa, and cheese.
